This past month's supper club theme was "Asian." We've previously done Korean and Thai themed dinners. But "Asian" is so broad! I wasn't sure what I was making until I saw this recipe in the latest edition of Every Day with Rachael Ray. I thought an appetizer soup would fit nicely. Ramen is definitely asian and I love tofu. This dish was soooo easy to put together. And cost-wise, this dish was super cheap to make as well. This was a tasty soup but you MUST make and add the chili oil to really get a great depth of flavor! This is super-easy to make a vegetarian soup by replacing the chicken broth with vegetable broth. We all enjoyed this soup and it was a great start to a really tasty meal!

Tofu Ramen Soup with Spinach
recipe from Every Day with Rachael Ray
Ingredients:
1/2 cup vegetable oil
2 tablespoons crushed red pepper
2 tablespoons thinly sliced garlic
6 cups sodium-free chicken broth
1/2 pound cremini mushrooms, stems discarded and caps chopped into 1/4-inch pieces
1 bunch scallions, thinly sliced
1/4 cup soy sauce
1 1/2 tablespoons sugar
3/4 ounce unpeeled fresh ginger, cut into 2 or 3 large slices
4 ounces fresh spinach, chopped
1/2 pound firm silken tofu, cut into 3/4-inch cubes
3 3 ounce packages instant ramen (noodles only)
Salt
Directions:
1.In a small saucepan, heat the oil, crushed red pepper and garlic over medium-high heat until the garlic sizzles. Lower the heat to low and cook, stirring, until the garlic turns golden, about 3 minutes. Turn off the heat and let the mixture sit for at least 30 minutes. Strain the chile oil into a bowl, discarding the solids.
2.Meanwhile, bring a medium pot of water to a boil. In another medium pot, mix the chicken broth, mushrooms, scallions, soy sauce, sugar and ginger. Cover and simmer over high heat for 8 minutes. Lower the heat, cover and simmer until the mushrooms are soft, about 5 minutes. Turn off the heat; discard the ginger. Stir in the spinach, then the tofu. Cover to keep warm.
3.Add the ramen to the boiling water, breaking up the noodles. Cook until tender, 3 minutes. Drain, then stir the noodles into the soup. Season with salt.
4.Divide the soup among bowls. Drizzle each with some of the chili oil.

Spicy Eggplant and Tofu Stir Fry
My sister is a vegetarian. She was up visiting from Maryland with her family several weeks ago. My husband and I had planned an asian inspired dinner including spicy rice and pork tacos. I wanted to have something for my sister to eat, besides side dishes, and knew when I found this recipe that it was what I was going to make. Ashlee at Veggie by Season, where I found this recipe, was inspired by P.F. Chang's Chicken and Eggplant when she created this dish. I've only eaten at P.F. Chang's a couple of times and have never tried that dish, so I have nothing to compare it to. However, this recipe was really easy to make and had great flavor! Everyone (including the non-vegetarians) enjoyed this. Since my husband and I love tofu, this is definitely a dish that I'd make again for us....the kids, not so much!
Spicy Eggplant and Tofu Stir Fry
recipe slightly adapted from Veggie By Season
Ingredients:
2 tsp. sesame oil
1 large eggplant, slightly peeled and diced in 1" chunks (about 2 lbs.)
Kosher salt
1/4 c. soy sauce
1/4 c. vegetable stock
2 tbsp. rice wine vinegar
2 tbsp. sherry
1 tbsp. sriracha
1 tbsp. dark brown sugar
1/2 tsp. ground pepper
4 scallions, white and green parts, trimmed and sliced
2 garlic cloves, minced
2 tsp. cornstarch
1 block of firm tofu, pressed and cut into 1-inch cubes
Directions:
Heat a pan over medium heat. Add sesame oil and eggplant, season with salt and stir fry for 5 minutes, until caramelized and slightly softened.
In a small bowl whisk together the soy sauce, vegetable stock, sherry, sriracha, sugar, pepper, scallion, garlic and cornstarch. Pour over eggplant and turn heat to low.
Mix eggplant with sauce, bring to a low simmer. Gently stir in tofu, combining with eggplant and sauce.
Simmer mixture for another 5-8 minutes, until eggplant is tender.
If mixture gets too dry, add another splash of vegetable stock or soy sauce (in equal parts).

The Weekend Chef: Ramen Skillet
I used to love ramen noodles growing up. In high school it was something quick and easy that I made, probably more often as an after-school snack than a meal. Today, it is very rare that I eat the noodles. I find the flavoring packets way too salty. However, being budget conscious, ramen noodles are so cheap! I knew that there were creative people out there that could find ways to use these noodles in a more healthy way. I was so glad that I found this recipe. My husband, the Weekend Chef made this one. It was super quick and easy to make. The original recipe used pork, but I had him substitute tofu to make it a vegetarian dish. It was super tasty and the kids loved it!
Ramen Skillet
recipe slightly adapted from Frugal Antics of a Harried Homemaker
Ingredients:
1 pkg. firm tofu, drained
8 tsp. soy sauce
1 Tbsp vegetable oil
1 Tbsp sesame oil
2-3 green onions, chopped
6 medium garlic cloves, minced
2 14 ounce cans vegetable broth
4 3 ounce packages ramen noodles (discard seasoning)
2 Tbsp oyster sauce
1 10 ounce box frozen broccoli, thawed
Preparation:
Drain tofu, pat dry, cut into bite-size cubes and toss them with 2 tsp of the soy sauce.
Heat the vegetable oil and sesame oil in a skillet over high heat until just smoking. Add the tofu, and cook until it begins to brown. Flip over the cubes and let it cook on the other side, too.
Once browned on both sides put in a bowl, and keep it warm. Cook the onion in skillet until soft, add garlic, and heat through. Meanwhile,in a separate pan, heat the broth and add the ramen, broken into small chunks. Simmer until ramen is just tender, about 2 minutes. Add the remaining 2 Tbsp soy sauce and the oyster sauce, stirring to mix well. Add the broccoli and cook until done and sauce thickens a bit. Add in the tofu and the onion mixture, heat through and serve.
Family Rating: 1 1/2 thumbs up.
